Winemaking Note
Organically grown and hand-sorted in vineyard and winery before 100% de-stemming. A long maceration and cold fermentation followed by fourteen months maturation in François Frères Oak. Bottled without fining or filtration. In 2008, the length of time on skins was reduced and the ferments pumped over more than punched down.
Vintage Condition
For the second year in a row extremely challenging conditions were alleviated by consistently dry and warm conditions in late August. Low crop levels due to a cool and wet spring was further reduced due two hailstorms. Vineyard management was key – low yields, obsession to detail and the bravery to give the vines time to ripen. Frederic conducted rigorous sorting in the vineyard and again in the winery, with only a third of the vineyard making the final blend.
